Gluten Free Cranberry Orange Almond Cookies

  

I hope you enjoy these yummy, flavorful cookies!

Ingredients:

– 2 1/4 cups of GF oat flour

– 1/2 cup of Stevia in the Raw

– 1/2 cup of Coconut Palm Sugar (can substitute Brown Sugar)

– 1/2 stick of Butter

– 1/4 cup of Applesauce 

– 1 egg

– 1/2 teaspoon of Baking Soda

– 1/2 teaspoon of Salt

– Zest and juice of 1 Clementine

– 1/3 – 1/2 cup of Dried Cranberries

– 1/3 – 1/2 cup of Sliced Almonds
 

Directions:

1. Cream together Butter, Stevia in the Raw, and Coconut Palm Sugar with a mixer.

2. Add Applesauce, Egg, and Clementine juice/zest, and mix until combined.

3. Slowly add in Oat Flour, Baking Soda, and Salt, and mix.

4. Fold in Dried Cranberries and Sliced Almonds. 

5. Chill dough in refrigerator for 20 to 30 minutes.

6. Using a small ice cream scoop, scoop and slightly flatten dough balls onto parchment lined baking sheet.

7. Bake at 350 degrees for 15 minutes! 

8. Let cool and enjoy!
